Pizza Quesadilla is a kid-friendly recipe so easy it only takes 5 minutes. All you need are tortillas, pepperoni, cheese, and pizza sauce.

PIZZA QUESADILLA

I made these Pizza Quesadillas for my kids and I don’t think we’ll ever do regular quesadillas again. They’re so simple but so good. Such a simple combination but everyone loves them.

Most of my favorite dishes are a cross between Mexican and Italian food like this Taco Pasta and these Mexican Stuffed Shells. Warm cheese and pepperonis sandwiched in between buttery tortillas and dipped in pizza sauce is really a hands down hit any way you fix it.

All you have to do is spread a thin layer of pizza sauce on the inside of the tortilla and layer mozzarella cheese and pepperoni.

HOW TO MAKE PIZZA QUESADILLAS

  1. Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer onto a paper towel to drain.

  2. Brush each tortilla with a thin layer of pizza sauce. You want the layer so thin that if you turned it over, none would drip.

  3. Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).

  4. Preheat a medium cast-iron skillet over medium heat. Add a little butter if desired and melt.

  5. Gently place quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.

  6. Slice into quarters and serve with a little bowl of warm pizza sauce for dipping.

This is SUPER SIMILAR to “tortilla pizzas” which I grew up eating! I’ve never seen anyone else do it! My mom would put the mozzarella AND sauce the tortillas and microwave it. Wala. Done. She even sent them to school with my brother in his lunch (like cold pizza). Awesome.

FAQs

Is there such a thing as a quesadilla? ›

What makes a quesadilla a quesadilla is the use of a tortilla and cheese. The tortilla is traditionally made of corn, although some modern variations use flour tortillas. The cheese is usually melted inside the tortilla, and additional fillings such as meat, vegetables, or beans can be added.

How do you doctor up a quesadilla? ›

Add Meat and Veggies

That's understandable; melted cheese inside of a tortilla is delicious, but it's not very filling. For this reason, many folks like to add some kind of meat to their quesadillas. Chicken and (fajita) steak are popular choices, and those are far from your only options.

How to make quesadillas on stove reddit? ›

I preheat it and take one large tortilla and toast it on this pan. I set that tortilla aside and add a new one to the pan. I add cheese and whatever else on top of this tortilla (not too full, the cheese has to stick to both sides) and then add the preheated tortilla on top and cook until warm and melty.

What is the best cheese for quesadillas? ›

Sometimes the best cheese for quesadillas is whatever you have in the fridge when the craving strikes. Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

What can I add to my quesadilla to make it better? ›

Southwestern: Fill your quesadilla with black beans, chopped onions, peppers, tomatoes, corn, cilantro and pepper jack cheese. Sprinkle with your favorite spices, like garlic powder, chili powder, cumin or red pepper flakes, and top with a spoonful of Greek yogurt or sour cream.

What are good things to put in a quesadilla? ›

If you want to enjoy Mexican-inspired vegetarian quesadillas, try adding black beans, sautéed zucchini, green onions, corn, sour cream, and bell peppers. Even without chicken, beef, or other meats, you can still enjoy a flavorful, crispy quesadilla.

Should a quesadilla be crunchy or soft? ›

It's not soft, it's not a taco. Roasted Chile Poblano Quesadilla requires medium heat on a comal to turn the exterior crispy. The quesadilla is crispy on the outside without being hard, and it's moist on the inside, the melted cheese providing a contrast. You need really good melting cheese and good tortillas.

Why are my quesadillas not crispy? ›

Too much fat will make your quesadilla soggy instead of crispy. Use just enough to coat the bottom of your skillet — about 1/2 teaspoon of butter or oil. Warm it in the skillet over medium to medium-high heat. Add the tortilla and top with cheese.

Why do my quesadillas always burn? ›

In addition, once the burner is turned off, there is residual heat that will continue to cook the food, risking a burnt quesadilla. Because you want your tortilla to heat up slowly so that the cheese gets a chance to melt, medium heat is where it's at if you're cooking with an electric stovetop.

Do you fry quesadillas in butter or oil? ›

I opt for butter over oil whenever possible, but this is one case where oil is better: Butter contains water, which means that your quesadillas will turn out damp and floppy. Oil is pure fat, so it browns tortillas impeccably, resulting in pleasantly crispy spots on the outside of your quesadilla.
