I MADE HOMEMADE BAGELS.

There are so many things I'm loving right now. I'll get back to these bagels in a moment. Stay with me. Hang in there.

First. I just finished The Crown on Netflix. Loved that one. If you enjoyed Downton Abbey, then you need to watch The Crown, but now I'm wondering how in the bloody heck do I wait until NEXT YEAR for the 3rd season? And I'm sitting here pondering, is the Queen watching too? What does Kate Middleton think? Are all the story lines accurate? I have so many questions.

Second. I am enjoying using the My Fitness Pal app. It got lost in between my Goodreads and Instagram app for many, many months, but I'm happy to report I'm back on track. Something about tracking everything I eat bodes well for me. Now, if it just had an alarm go off each time I entered, "Starbucks Grande Latte."

Third. I've never been one to be big into beauty products but I'm singing the praises of my CocoRoo Coffee Bean Scrub. It's heavenly. And a bit weird too. I keep mine in the shower and scrub the heck out of my 36 year old face each morning. If you love the smell of coffee then you'll love this scrub. Anything to help with wrinkles and aging.

And before you look at the ingredient list and start shouting, THERE ARE MORE THAN TWO INGREDIENTS!

Just calm down.

There are two MAIN ingredients. The other two {baking powder and salt} are just spices in my opinion. But what about the egg wash you say? Well, it technically it isn't needed, but it does give them a nice golden brown color. And what about the Everything Bagel seasoning?

Well, now you're just getting picky.

I first saw this recipe over on Skinnytaste. She has a great video on making them {see it HERE}. I did change up a few things - I used a whole egg for the wash, just plain salt versus kosher salt and didn't even bother with the parchment paper {as I didn't have any} and found out that a greased cookie sheet worked just as well.

I was scared. Oh, how I was scared.

Bagels seems super duper intimidating to make. I mean, that is what those big city New York deli's are for! Never in my dreams did I think that flour and Greek yogurt could make a bagel and that I'd be sampling one in 35 minutes.

I was beyond thrilled at how these turned out. They are SOFT and CHEWY. They smell amazing while baking. They stay fresh for daaaaaaaaaays. They are perfect for breakfast {fried egg and bacon if you please!} and even better at lunch {ham, spinach, veggie cream cheese is my favorite}.

Have I hooked you yet? Will you try these?

And here's the thing. Next time I am going to try a Cinnamon Sugar version. Then maybe a Cinnamon Raisin version. Prehaps even an Asiago and Parmesan Cheese variation?

I could go on forever.

2 Ingredient Everything Bagels

I never knew I could actually make homemade bagels in my OWN HOME! And to think there are essentially only two ingredients. These are soft, chewy and just down right perfect.

  1. Preheat the oven to 375 degrees.
  2. Grease a cookie sheet heavily with cooking spray.
  3. In a bowl sift together the flour, baking powder and salt.
  4. Add in the Greek yogurt, stirring together with a spoon. It will come together to form a soft dough.
  5. Sprinkle additional flour on the counter top and knead the dough about 15 times, just enough to become elastic, yet not sticky. Adding more flour while kneading if needed.
  6. Form the dough into a ball and cut into four equal pieces.
  7. Taking one piece of dough, either roll it into a rope and form into a circle or stretch the dough out a bit breaking through the center to make a hole. Lay the four bagels on the greased cookie sheet.
  8. Beat the egg and brush the egg wash onto the four bagels. Then liberally season with the Everything But the Bagel Seasoning.
  9. Bake for 25 minutes until golden brown. Allow to cool for 10 minutes.

These bagels will stay fresh for up to 3 days in an airtight container or baggie. I use Trader Joe's Everything But the Bagel Seasoning, but there are many others out there - including King Arthur Flour's Everything Bagel Topping. Or you are welcome to make your own. It generally is a combination of sesame seeds, sea salt, dried minced garlic, dried minced onion and poppy seeds.
